The Peking style of cooking, especially the preparation and service of food, became an important part of the Court ritual with it’s lighter and more elegant cuisine than that of the outlying regions.

Kung Po

Sze Chuan

Famed for its hot fiery cooking. More subtly flavoured, however, than those of India. This fine cuisine is cooked with leeks, garlic, onions, wine, sesame oil and chilli


Braised
This popular dish is fried with finely cut onions and peppers. Stirfried with sweet and spicy sauce. A touch of garlic is added to complete this style of cooking from Beijing


Lar-Chi

Lar-Chi means "Wee Chilli” This dish is cooked with mixed vegetables, fried with garlic, peppcrs, chilli and a touch of rice wine. Delicious but rather hot!


Touban
This dish is cooked with fresh tomatoes and onions, with a chilli flavoured reel bean sauce. Rather refreshing but spicy

Siam
This dish is stirfried with onions, peppers and garlic in a rich siam chilli sauce. Spicy but nice


Mandarin Sauce

This popular dish is coohed in a rich, tangy, fruity sauce. Pleasing to the eye and palate, very appetising
